Lapis Susu, a Thriftier Layer Cake

Steps

  1. Put all of ingredients A into a mixing bowl, that is 100 g powdered sugar, 250 g cold butter, 100 g margarine, 180 g condensed milk and 1 tsp vanilla extract.
  2. Beat with the paddle at high speed until fluffy, pale and soft, scraping the sides and bottom after a minute or two.
  3. Swap the paddle for the whisk, keep beating at high speed while adding the 20 egg yolks gradually, two or three at a time.
  4. Once combined switch off the mixer, then add ingredients C, that is 60 g flour and 25 g milk powder, both sifted.
  5. Beat at low speed until combined, switching off the mixer now and then to stir by hand so the flour does not clump in the middle.
  6. In a clean mixing bowl beat 4 egg whites at medium speed until very foamy, then add 50 g powdered sugar gradually and beat until glossy and stiff.
  7. Move the butter and yolk batter to a larger bowl, add half the beaten egg whites, and fold with a whisk until combined.
  8. Add the remaining half then fold again until evenly combined.
  9. Prepare a square 18x18 cm pan that is 8 cm deep and line it with baking paper without greasing it.
  10. Put the empty pan into the oven and heat it at 170 degrees Celsius with top and bottom heat for 5 minutes.
  11. Move half the batter into a smaller container so the batter in the big bowl is not stirred too often.
  12. Portion out the batter for one layer and weigh it to your chosen layer weight.
  13. Take the pan out of the oven, stir the batter briefly, then pour in one layer and spread it across the whole base especially into the corners.
  14. Bake the first layer at 170 degrees Celsius with top and bottom heat for 7 minutes, then change to 210 degrees Celsius with top heat only for 2 minutes.
  15. Once the first layer is done press the surface lightly, then pour in the batter for the second layer.
  16. If small bubbles appear, prick them with a toothpick then press to level the surface, without pressing too hard.
  17. If a large bubble appears, take the pan out of the oven straight away and prick it while the batter is still wet.
  18. Repeat the same steps all the way to the last layer.
  19. While it is still hot, brush the surface with butter for extra aroma then press it lightly.
  20. Turn the cake out of the pan while hot and leave it upside down until it reaches room temperature or even until the next day.
  21. Trim the sides of the cake so it looks neater.
