Lapis Legit Layer Cake, Tips and Tricks

Steps

  1. Prepare a 20x20 cm pan that is 7 cm deep, grease only the base with butter and leave the sides ungreased, then line it with baking paper.
  2. For ingredients A, put 150 g powdered sugar into the mixing bowl first, then add 450 g butter so the sugar does not fly around.
  3. Beat at high speed for about 10 minutes until the butter is fluffy, white and soft, scraping the sides of the bowl occasionally.
  4. For ingredients B, beat 40 egg yolks with 150 g powdered sugar at high speed for about 10 minutes until the batter is fluffy and thick.
  5. Prepare a large bowl and pour in the egg batter, which is batter B.
  6. Add the butter batter, which is batter A, then fold until fully combined.
  7. Add 2 tbsp condensed milk, then sift in the flour and milk powder so they do not clump, and stir until combined.
  8. Move a third of the batter into another bowl so the batter in the main bowl is not stirred too often and does not thin out.
  9. Put the empty pan into the oven and heat it for 5 minutes at 170 degrees Celsius with top and bottom heat.
  10. While waiting, weigh out 90 g of batter for the first layer.
  11. Take out the hot pan, pour in the batter, then spread it across the whole pan right into the corners.
  12. Bake on the lower rack at 170 degrees Celsius with top and bottom heat until browned, remembering to rotate the pan so it cooks evenly.
  13. Once browned take out the pan, move the rack to the middle, change the temperature to 190 degrees Celsius and turn off the bottom heat.
  14. Level the surface of the cake with a layer cake presser, pressing lightly and not too hard.
  15. Add the batter for the second layer, spread it into every corner of the pan again, then bake at 190 degrees Celsius with top heat only.
  16. If bubbles appear, prick them right away until they deflate before the surface dries, so they do not scorch.
  17. If butter melts and settles at the bottom of the batter, just stir it back in before using, but do not stir it too often.
  18. Repeat the same steps until the batter is used up; for the last layer bake only until pale brown and rotate the pan often because the taller it gets the easier it burns.
  19. Move the rack to the lowest position, change to 170 degrees Celsius with top and bottom heat, and bake until browned.
  20. Press the surface of the cake once more and wait until it is not too hot before turning it out of the pan.
  21. Turn the cake over and leave it upside down overnight so the surface stays flat and neat, then peel off the baking paper.
