Pontianak Lapis Legit, Thousand Layer Cake

Ingredients

  1. Combine 300 g butter, 100 g margarine and 150 g powdered sugar, stirring briefly first so the sugar does not fly around when you mix.
  2. Beat at high speed for about 10 minutes until the butter mixture is light and white.
  3. In another bowl, beat 36 egg yolks with 150 g powdered sugar at high speed for about 10 minutes until fluffy and thick.
  4. Lower to the slowest speed, add 3/4 tbsp flour, 3/4 tbsp milk powder and 1 tbsp condensed milk, mix until evenly combined then switch off the mixer.
  5. Preheat the oven to 150 degrees Celsius with top and bottom heat on the lowest rack, then put the empty 20x20 cm pan in for about 5 minutes.
  6. Fold a third of the egg batter into the butter mixture until combined, then pour in the remaining egg batter and mix until fully incorporated.
  7. Move about a third of the batter into another bowl so the main batter does not get stirred too often.
  8. Prepare a small container and weigh out about 90 g of batter for one layer, adjusting to the layer thickness you want.
  9. Take the hot pan out of the oven, pour in the weighed batter, then spread it evenly over the whole base of the pan.
  10. Bake the first layer at 180 degrees Celsius with top and bottom heat on the lowest rack.
  11. While waiting, weigh out another 90 g of batter for the second layer, and rotate the pan now and then so it bakes evenly.
  12. Change to 170 degrees Celsius with top heat only, then bake until the surface is browned.
  13. Prick any bubbles that appear with a toothpick, then press the surface down lightly.
  14. Pour the second layer of batter over the first layer then spread it out as before.
  15. For the second layer onward, bake at 190 degrees Celsius with top heat and the rack moved to the middle until the surface is browned.
  16. Repeat the same steps until all the batter is used, pricking each bubble immediately while the batter is still wet.
  17. If melted butter settles under the batter, just stir it back in until evenly combined, but do not stir too often.
  18. Once the last layer is lightly browned, change to 170 degrees Celsius with top and bottom heat on the lowest rack and bake for about 5 more minutes, being careful not to burn it.
  19. Let the cake cool completely before slicing.
