Kue Bingke, Pontianak Coconut Milk Cake

  1. Prepare a pot, pour in 500 ml thick coconut milk and add 5 pandan leaves.
  2. Turn the stove to medium low heat and cook, stirring, until the coconut milk is hot.
  3. Add 225 g sugar, 1/3 tsp salt and 1/2 tsp vanilla powder, then keep cooking while stirring.
  4. Once it boils, turn off the heat and strain the coconut milk.
  5. Set the coconut milk aside until it is just warm.
  6. Preheat the oven to 180 degrees Celsius with bottom heat.
  7. Pour a little of the warm coconut milk into a bowl holding 80 g flour and stir until evenly combined.
  8. Pour the flour mixture into the cooked coconut milk and stir until smooth with no lumps of flour left.
  9. Beat 4 eggs loosely with a fork, pour them into the coconut milk batter, then stir again until evenly combined.
  10. Add four drops of pale yellow food coloring, this step can be skipped.
  11. Strain the batter into a measuring cup; one pan needs roughly 400 ml of batter.
  12. Grease two thick 16 cm bingke pans evenly with cooking oil.
  13. Turn the stove to low heat and heat the pans for only 5 minutes, do not let them overheat.
  14. Pour the batter into the hot pans until it sizzles.
  15. Bake at 180 degrees Celsius with bottom heat on the lower rack for 15 minutes.
  16. After 15 minutes move to the middle rack, switch to top and bottom heat, and bake for another 15 minutes, rotating the pan occasionally.
  17. Switch to top heat only and bake for another 10 minutes or until the surface is browned.
  18. Take the cake out of the oven, let it cool, then turn it out of the pan.
