Ingredients

Steps

  1. Put 10 pandan leaves, cut into small pieces, into a blender jar.
  2. Add 300 ml water, then blend until smooth and evenly combined.
  3. Strain the pandan juice.
  4. In a large bowl, add 4 eggs and the strained pandan juice.
  5. Add 500 g medium protein wheat flour, 300 g granulated sugar, 1 tsp salt, 1/2 tsp vanilla, and 900 ml medium thick coconut milk.
  6. Stir until evenly combined and the batter is smooth and slick; you can use a chopper or a whisk.
  7. Add 100 g melted margarine, then keep stirring until evenly combined.
  8. If you mix by hand, strain the batter first to make sure there are no lumps.
  9. Bring water to a boil in a pot for steaming.
  10. Grease the moulds thinly with cooking oil, then pour in the batter until the moulds are almost full.
  11. Once the water boils, set the steamer on the pot; if the steamer lid is flat, line it with a clean cloth so condensation does not drip onto the batter.
  12. Steam for about 45 minutes over medium heat or until the surface of the cake is dry.
  13. Lift the cakes out of the steamer, let them rest until just warm, then turn them out of the moulds.
