Open offline saves

Ingredients

Coconut Filling:

Crepe Batter:

Steps

  1. For the filling, put 300 g palm sugar, 2 tbsp granulated sugar, 1 tsp salt, 200 ml water, and 2 pandan leaves into a saucepan, then cook until boiling and the sugar dissolves.
  2. Once it boils and the sugar has dissolved, turn off the stove and strain the syrup.
  3. In a saucepan, add 450 g half mature grated coconut and the strained palm sugar syrup, then stir until evenly combined.
  4. Cook over medium heat, stirring constantly, until the liquid reduces and the mixture feels dry, but do not let it get too dry so it stays juicy.
  5. For the crepe batter, put 500 g wheat flour, 50 g tapioca flour, 1/2 tsp salt, 2 eggs, and 950 ml medium thick coconut milk into a bowl, then stir until smooth, slick, and free of lumps.
  6. Add 1 tbsp cooking oil and 1 tsp vanilla, then keep stirring until evenly combined.
  7. Set aside a little batter for the flower pattern, then stir 300 ml pandan juice into the remaining batter until evenly combined.
  8. Add food colouring to the reserved batter; colour one part yellow and leave the other part white.
  9. Heat a frying pan over low heat, then draw the pattern in the pan by piping the yellow batter first and then the white, alternating so the colours do not mix or bleed.
  10. Pour in enough pandan batter, not too thick so the crepe does not tear when rolled, and keep the heat low.
  11. Once the edges start to lift away from the pan, the crepe is done; peel it off and stack the crepes so they stay moist, then cook the rest of the batter.
  12. Take one crepe, spoon in about 1 tbsp of filling, then fold and roll it up; repeat until all the crepes are filled.
