Batter Ingredients:

Steps

  1. Cook 600 ml medium-thick coconut milk with 1/2 tsp salt and 1 pandan leaf over medium heat, stirring constantly, until it boils so the coconut milk does not split, then turn off the heat and let it cool.
  2. Melt 200 g margarine in a bowl set over a pot of hot water, then set it aside.
  3. For the starter, mix 50 ml warm water, 1 tsp granulated sugar, and 1 1/2 tsp instant yeast, stir well, cover the bowl, then leave it about 5 minutes until the yeast puffs up and foams.
  4. Beat 3 eggs and 325 g granulated sugar on medium speed until the sugar dissolves.
  5. Add 500 g sifted low-protein flour together with 1/2 tsp baking powder, alternating in batches with the cooled coconut milk, and mix on low speed until everything is evenly combined.
  6. Add the melted margarine, 40 g sweetened condensed milk, 1 tsp vanilla, and the activated yeast starter, then mix on low speed until evenly combined.
  7. Cover the batter with plastic wrap or a clean cloth and let it rest about 60 minutes until risen.
  8. Uncover and stir the batter to break up the air bubbles inside.
  9. Grease the pukis molds thinly with margarine, then heat the molds over low heat.
  10. Fill the molds only three quarters full, because the batter will rise as it cooks.
  11. Cover the molds and cook over low heat until the surface is dry and the underside is golden brown.
  12. Lift the cakes out of the molds, then cook the rest of the batter.
