  1. Cook 600 ml of coconut milk with 2 pandan leaves and 1/2 tsp of salt, stirring until evenly combined and boiling.
  2. Pour the coconut milk into a bowl, then stir it until completely cool and leave it there.
  3. Combine 50 ml of warm water with 1 1/2 tsp of fermipan yeast and 1 tbsp of granulated sugar, mixing until even.
  4. Cover it and rest for 5 minutes until the yeast foams up and is active, then set it aside.
  5. In a fresh bowl put 3 eggs with the granulated sugar, then beat for 5 minutes at the lowest speed until the sugar dissolves.
  6. Work in 1/2 tsp of baking powder and 1/2 kg of low-protein all-purpose flour in stages alongside the cooled coconut milk, folding gently first, then beat at low speed until evenly combined.
  7. Pour in 200 grams of melted margarine, two sachets of sweetened condensed milk, vanilla paste to taste, and the activated yeast.
  8. Beat again briefly at low speed, then go over it with a whisk to be sure everything is evenly combined.
  9. Cover the batter with a cloth, then rest it for 60 minutes until it rises.
  10. Uncover it, then whisk the batter to release the air trapped inside.
  11. Divide the batter into two portions, then flavor one of them with pandan paste.
  12. Heat a pukis pan for 5 minutes over the lowest heat, then brush margarine into each mold.
  13. Fill each mold only 2/3 full, then griddle for 13 minutes over the lowest heat until the surface is dry.
  14. Lift the cakes out of the pan, then griddle the pandan batter the same way for 13 minutes and serve.
