Ingredients

Topping:

Steps

  1. For the starter, mix 25 g wheat flour, 1 tsp instant yeast, 1 tbsp granulated sugar, and 50 ml warm water, then stir until evenly combined.
  2. Cover the bowl and leave it for 15 minutes until the starter rises and foams.
  3. Put 200 g granulated sugar and 3 eggs into a bowl.
  4. Beat at maximum speed for about 5 minutes until the mixture is risen and thick.
  5. Add the activated starter to the batter.
  6. Sift in part of the 250 g wheat flour, then mix on the lowest speed until evenly combined.
  7. Add part of the 300 ml coconut milk, then mix again until evenly combined.
  8. Add the remaining flour, 1/2 tsp vanilla powder, and 1/4 tsp salt, then mix again until evenly combined.
  9. Add the remaining coconut milk, then keep mixing until evenly combined.
  10. Switch off the mixer, fold the batter with a spatula, and strain it if any lumps remain.
  11. Add 50 ml cooking oil, then fold from the bottom up until no oil is left settled at the bottom.
  12. Cover the batter with plastic wrap or a clean cloth, then rest it for 60 minutes.
  13. Uncover the batter once it has risen and foamed, then stir until evenly combined.
  14. Set the heat to low, heat the pukis pan, then brush it thinly with margarine, just once at the start.
  15. Once the pan is hot, pour the batter in to only three quarters of each mould, as the cakes will rise.
  16. Cover the pan and cook until the tops of the cakes begin to dry.
  17. Scatter over chocolate sprinkles or any topping you like, then carry on cooking until the cakes are done.
  18. Once the tops are dry and no longer sticky to the touch, lift the cakes out of the pan.
  19. Repeat until all the batter has been cooked.
