RESEP KUE SELAI BINGKE / SRIMUKA

Selai Bingke, Pandan Custard Sticky Rice Cake (Srimuka)

Steps

  1. Wash 350 g glutinous rice, soak it for about 4 hours, then drain.
  2. Put the glutinous rice, the medium thick coconut milk and 1 tsp salt into a pan.
  3. Turn the heat to medium and cook until the coconut milk has reduced.
  4. Once the coconut milk is mostly absorbed, take it off and transfer it to a steamer with already boiling water.
  5. Steam for 15 minutes.
  6. Transfer the rice to a 20x20 cm tin lined with banana leaf.
  7. Press the rice down with a wide spoon until it is compact and level.
  8. For the top layer, snip 10 pandan leaves and 5 suji leaves into small pieces.
  9. Add 125 ml room temperature water, blend until smooth, then strain and keep only the juice.
  10. Put 2 whole eggs and 165 g sugar in a large bowl.
  11. Whisk until the sugar has dissolved.
  12. Pour in 425 ml thick coconut milk and 100 ml pandan juice, then stir well.
  13. Add 120 g low protein flour, 30 g tapioca starch and 1/4 tsp salt.
  14. Whisk until the batter is evenly combined.
  15. Strain the batter straight into a pan; any remaining lumps will dissolve as it cooks.
  16. Turn the heat to low and stir constantly without stopping.
  17. Once the batter starts to gather slightly on the spatula, turn off the heat.
  18. Pour the batter over the sticky rice layer in the tin.
  19. Steam over medium low heat so the top layer does not puff up.
  20. Once cooked, let the cake cool completely, then slice with a knife wrapped in plastic so it does not stick.
