Bongko Pontianak with Coconut and Palm Sugar Sauce

Steps

  1. Snip 10 suji leaves and 10 pandan leaves into small pieces.
  2. Put the cut suji and pandan leaves into a blender, pour in half of the 1.1 liters of water, then blend until smooth.
  3. Strain the blended mixture while squeezing or pressing so all the juice comes out.
  4. In a large enough bowl combine 200 g rice flour, 90 g hunkwe flour, 10 g sugar and half a teaspoon of salt, then stir until evenly combined.
  5. Pour in the strained pandan and suji juice, stir until evenly combined with no lumps of flour left, then set it aside.
  6. Boil the remaining water.
  7. Once it boils take it off and pour it into the batter you set aside, then stir again until evenly combined.
  8. Strain the batter into a non stick pan.
  9. Turn the heat to low and keep stirring with a spatula without stopping.
  10. Once the batter starts clumping, turn off the heat straight away and keep stirring until it thickens.
  11. Prepare a square 18x18 cm pan lined with heatproof plastic, pour the batter in, then spread it evenly across the pan.
  12. Steam over medium heat for 30 minutes or until cooked in a steamer with boiling water, opening it every 5 minutes to wipe the lid dry so condensation does not drip onto the cake.
  13. Once cooked turn off the heat, take it out, and let it cool before slicing.
  14. For the palm sugar sauce, prepare a pot and add 250 g palm sugar, pandan leaves, 100 g granulated sugar and 500 ml water.
  15. Turn on the heat and cook until the sugar dissolves and it boils.
  16. Once it boils lower the heat, mix 1.5 tbsp cornstarch with a little water and stir until smooth, then pour it in slowly while stirring.
  17. Cook again until it boils, turn off the heat, then strain it while hot.
  18. For the coconut sauce, pour 400 ml coconut milk into a pot and add half a teaspoon of salt.
  19. Turn the heat to low and stir gently until it boils, then turn off the heat and take it off.
  20. Turn the cooled bongko out of the pan then cut it as you like using a plastic knife or a knife wrapped in a plastic bag.
  21. Serve the bongko with the coconut sauce and palm sugar syrup.
