Steps

  1. Prepare a bowl and add 125 g butter and 25 g powdered sugar.
  2. Whisk until evenly combined.
  3. Add 1 egg yolk, keeping a little of the white for extra crust texture, then stir again until evenly mixed.
  4. Add 185 g cake flour and 10 g cornstarch in stages while mixing until the dough is evenly combined and no longer sticks to your hands.
  5. Divide the dough into four equal portions.
  6. Take one portion and press it onto a plate until it covers the whole surface of the plate.
  7. Take another portion, divide it in two, then roll each into a long rope while compacting it.
  8. Press the ropes onto the rim of the plate, join them until the whole rim is covered, then tidy them up while pressing so they stick well.
  9. Crimp the edge of the crust with a pastry crimper so it looks prettier.
  10. Prick the surface of the dough with a fork so it does not bubble up while baking.
  11. Boil 500 ml water, 175 g sugar and 2 pandan leaves until boiling, then remove and set aside until it reaches room temperature.
  12. Crack 5 whole eggs and 5 egg yolks into a measuring cup, adding more eggs if it does not yet reach 500 ml.
  13. Strain the egg mixture.
  14. Pour the cooled sugar syrup into the eggs and stir gently with a spoon, not a whisk.
  15. Strain the sugar and egg mixture two to three more times so the filling turns out smooth and silky.
  16. Pour in 150 ml sweetened condensed milk and stir gently with a spoon until combined.
  17. Bake the tart shells with top and bottom heat at 170 degrees Celsius until the surface of the crust is half dry.
  18. Pour the filling slowly into the shells.
  19. Bake again at 150 degrees Celsius with bottom heat until the filling is set and cooked, adjusting the temperature to your own oven.
  20. Let it cool, then slice and serve.
