  1. Roll the pineapple jam into balls using a measuring spoon (about 1.25 ml each), chilling it first so it is firmer and easier to shape, layering each batch with plastic.
  2. Mix the margarine and butter with the sifted powdered sugar, beat on low speed for 2-3 minutes until combined, scraping the sides of the bowl occasionally.
  3. Add the egg yolks in stages while continuing to mix briefly.
  4. Turn off the mixer, add the milk powder and cornstarch, and mix again on low speed until combined.
  5. Add the wheat flour in stages (about 3 batches), mixing until combined, then fold briefly with a spatula to make sure the dough is even and not sticky.
  6. Take a portion of the dough (cover the rest with plastic so it does not dry out), and portion it out with a 5 ml measuring spoon so the pieces are uniform.
  7. Flatten and shape each portion, fill with pineapple jam, seal tightly, and roll it into a neat ball.
  8. Bake over low heat for 30 minutes with the top vent open; after 15 minutes, swap the top and bottom tray positions so they bake evenly, then bake for another 15 minutes.
  9. Make the glaze from egg yolks, cooking oil and egg-yellow food coloring, stirring until combined.
  10. Once the tarts have cooled, brush with the egg yolk glaze, wait until slightly dry, then brush a second coat.
  11. Bake again for 15 minutes over low heat (swapping the tray position halfway through), then take them out and cool on a cooling rack before storing in jars.
