Ingredients

Glaze Ingredients:

Steps

  1. Put 700 g margarine, 50 g rum butter and 60 g icing sugar into a bowl, then stir for about 1 to 2 minutes until evenly combined and smooth.
  2. Add 6 egg yolks, then keep stirring until evenly combined.
  3. Add 1 kg low-protein flour, 60 g cornstarch, 80 g milk powder and 1 tsp vanilla powder, then fold with a spatula until evenly combined.
  4. Knead briefly by hand until the dough is soft and can be rolled.
  5. Take about 9 g of dough using a measuring spoon, roll it into a ball, then flatten it.
  6. Place a ball of pineapple jam of about 6 g in the centre, wrap the dough around it, then roll it into a smooth ball.
  7. Place the cookies on an ungreased tray so they do not slide around when you brush them with egg yolk later.
  8. Bake on the middle rack of a preheated oven at 130 degrees Celsius with top and bottom heat for about 25 minutes until baked and golden underneath.
  9. Take the tray out of the oven and let the cookies cool for about 20 minutes.
  10. For the glaze, mix 6 egg yolks, 3 tbsp cooking oil and 8 drops of deep yellow food colouring, then stir until evenly combined.
  11. Brush the cookies thinly with the glaze, let it dry briefly, then brush a second coat starting from the first cookie you brushed.
  12. Bake again on the lowest rack at 100 degrees Celsius with bottom heat only for about 15 minutes until the egg glaze is dry.
  13. Take the tray out of the oven and let the cookies cool completely before lifting them off, otherwise they break easily.
  14. Once cool, set the cookies in paper cups and store them in an airtight jar so they keep well.
