Steps

  1. Peel 3 medium pineapples, about 500 g net weight, remove the cores, wash them, cut them into small pieces, then blend until smooth with a little water.
  2. Put the blended pineapple and 1 cinnamon stick into a pot, then cook over medium heat, stirring occasionally, until it boils and starts to reduce.
  3. Lower the heat, add 100 g palm sugar, then cook again, stirring occasionally, until it thickens.
  4. Once the liquid has reduced further, add 150 g granulated sugar and cook until the jam is thick and firm, then turn off the heat and let it cool.
  5. Oil a bowl and your hands lightly, then take about half a teaspoon of jam and roll it into an oval log; repeat until all the jam is used.
  6. Put 250 g margarine, 2 tbsp icing sugar and 2 egg yolks into a bowl, then stir until smooth and creamy, or mix on low speed for about 2 minutes.
  7. Add 350 g low-protein flour, 2 tbsp milk powder, 2 tbsp cornstarch and 1/2 tsp vanilla powder.
  8. Stir and then knead the dough by hand until evenly combined, smooth and shapeable.
  9. Pack the dough firmly into a cookie press with a plunger, then press it out with the press held flat against the surface so the strip comes out straight.
  10. If the dough breaks or cracks as it is pressed, add 1 to 2 tbsp margarine a little at a time while kneading until smooth, then press again.
  11. Place a shaped log of pineapple jam in the middle of each pressed strip, press it in, roll it up, then cut it; repeat until all the dough is used.
  12. Arrange the nastar on a tray lined with baking paper or greased thinly with margarine.
  13. Bake in a preheated oven at 170 degrees Celsius with top and bottom heat for about 10 minutes.
  14. Take the tray out of the oven and let the cookies stand for about 5 minutes until just warm.
  15. For the glaze, stir 2 egg yolks, 1 tbsp milk and 1/2 tsp cooking oil until evenly combined.
  16. Brush the cookies thinly with a fine brush; you may repeat twice if you want a deeper yellow colour.
  17. Return them to the oven and bake for about 10 to 15 minutes until they look glossy and golden.
  18. Once the cookies are cool, lift them off the baking paper and store them in an airtight jar so they keep well.
