Melt-in-Your-Mouth Pineapple Tarts (Nastar)

  1. Peel and cut the pineapples into pieces.
  2. Blend the pineapple with a little water until smooth, setting aside some of the liquid so the rest blends easily.
  3. Pour all the blended pineapple into a pot and add the cinnamon sticks and cloves.
  4. Cook over medium heat until the water evaporates, then lower the heat and stir occasionally until the pineapple shrinks and dries out.
  5. Once fully dry, add the sugar and cook again over low heat, stirring constantly until the jam thickens and holds together.
  6. Take the jam off the heat and spread it on a plate to cool quickly.
  7. Weigh the jam into 6 gram portions and roll them all into balls.
  8. Beat the margarine, unsalted butter, salt, icing sugar, and vanilla extract until pale and fluffy.
  9. Add one egg yolk and mix until combined.
  10. Sift the all-purpose flour, milk powder, and cornstarch together.
  11. Add the flour mixture to the butter mixture in stages, folding with a spatula until it comes together as a dough.
  12. Cover the dough and rest it in the fridge for at least 10 minutes so the fat firms up.
  13. Weigh the dough into 8 gram portions.
  14. Preheat the oven to 150 to 160 degrees Celsius with top and bottom heat.
  15. Flatten each piece of dough, fill with a ball of pineapple jam, seal and roll it round, then arrange on a baking tray.
  16. Bake in the preheated oven for 20 to 25 minutes until cooked through.
  17. Make the egg wash by straining three egg yolks, then mixing in the oil and vanilla.
  18. Take the tarts out and brush them all over with the egg wash twice.
  19. Return to the oven for 10 to 15 minutes until glossy and beautifully coloured.
