Ingredients

Steps

  1. Prepare a bowl and add 400 gr of margarine and 320 gr of butter.
  2. Add 80 gr of icing sugar then stir until evenly combined with a spatula, or mix briefly on the lowest speed.
  3. Add 1 tsp of vanilla powder and 6 egg yolks then stir until evenly combined.
  4. Add 1 kg of low-protein wheat flour, 80 gr of milk powder, and 60 gr of cornstarch.
  5. Stir until the dough is evenly combined and comes together, then knead by hand to make sure it holds together.
  6. Take a little dough and roll it into a ball; if it comes out smooth, the dough is right and the measurements are correct.
  7. Keep the waiting dough covered with plastic so it stays moist, then portion the dough with a 1 1/2 tsp measuring spoon, about 10 gr, so the pieces are the same size.
  8. Place the jam filling in the centre, wrap it up tightly, and roll it into a smooth ball.
  9. Place the balls on a tray that has not been greased, so the cookies do not shift when you brush them with egg yolk.
  10. Preheat the oven for about 10 minutes at 130 degrees Celsius, put the tray on the lower rack, then bake at 130 degrees Celsius with top and bottom heat for about 40 minutes until the cookies are done.
  11. If you bake two trays at once, swap their positions after 20 minutes so they bake evenly.
  12. Once the cookies are done and their bases are golden brown, take the tray out of the oven.
  13. Let them cool for about 30 minutes before brushing them with egg yolk.
  14. Prepare 2 egg yolks, add 1 tsp of cooking oil, 1/2 tsp of sweetened condensed milk, and 1/2 tsp of honey, then stir briefly until evenly combined.
  15. Strain the egg yolk mixture and discard any lumps left behind.
  16. Once the cookies are cool, brush them with the egg yolk glaze.
  17. Once the first coat is dry and no longer tacky, brush them once more with the glaze so the colour comes out beautifully.
  18. Preheat the oven, put the tray on the lower rack, then bake at 100 degrees Celsius with top heat only for about 20 minutes or until the surface is dry and set.
  19. After about 20 minutes, when the tops are set, take the tray out of the oven, or bake about 10 minutes longer if you want a deeper colour.
  20. Let the cookies cool completely then put them into a jar so they keep well and do not go mouldy.
  21. For the cheese version, brush the cookies once with egg yolk glaze right after rolling them, before baking.
  22. Once glazed, sprinkle them with grated cheese.
  23. Put the tray on the lowest rack then bake at 130 degrees Celsius with top and bottom heat for about 40 minutes until the cookies are done.
  24. After about 40 minutes, when the tops are golden brown, take the tray out of the oven, then let them cool before putting them into a jar.
