Steps

  1. In a bowl add 125 g butter and 25 g granulated or powdered sugar.
  2. Whisk with a balloon whisk until the mixture is light and pale, no mixer needed.
  3. Add one egg yolk plus half of the egg white, then whisk again until evenly combined.
  4. Add 5 g cornstarch then whisk until evenly combined.
  5. Add 200 g cake flour in stages, holding back a little so the dough does not get too dry.
  6. Carry on mixing by hand, adding the remaining flour if the dough is still soft until it no longer sticks to your hands.
  7. Divide the dough into four equal parts; one ceramic plate uses two of them, and the rest must be covered so they do not dry out.
  8. Take one portion, press and compact it while rolling it into a ball.
  9. Place the dough in the middle of a ceramic plate, then press and spread it with your palm until it almost covers the whole base and sides, leaving about half a centimetre from the rim.
  10. Take the next portion, divide it in two, then shape each into a strip about half the length of the plate rim.
  11. Lift the strip gently and lay it along the rim of the plate, then do the same with the other half of the dough.
  12. At the join leave a little extra dough then press and compact it so the two pieces fuse perfectly and do not crack once baked.
  13. Press the dough at the rim downward to join the rim dough to the base on the plate.
  14. Crimp the edge using nastar tongs.
  15. Heat the tatung pot over medium low heat for 10 minutes.
  16. After 10 minutes open the pot, place the plate with the tart shell on the trivet, cover it again, then bake for 18 minutes or until the crust is half cooked.
  17. Crack 5 large whole eggs into a measuring jug.
  18. Crack 5 more eggs but take only the yolks; you need a total of 425 to 450 ml of egg, so add more if it is short.
  19. Stir the eggs gently with just a spoon so they do not get too foamy, then set them aside.
  20. Cook 115 g sugar with 500 ml water, add 5 torn pandan leaves and half a teaspoon of vanilla powder, cook until the sugar dissolves and the water is nearly boiling, then turn off the heat and remove the pandan.
  21. While it is still hot pour the sugar syrup straight into the eggs, stirring gently with a balloon whisk so it does not get too foamy.
  22. Strain the filling; here it is strained three times so the result is smooth.
  23. Before the final straining, pour in 185 ml condensed milk then stir until evenly combined.
  24. Strain it for the third and final time.
  25. Flatten any bubbled up crust gently with the back of a spoon so it does not tear.
  26. Stir the filling first, then pour it slowly over the back of a spoon so it does not drop straight onto the crust and create foam.
  27. Skim off and remove any foam on the surface of the filling.
  28. Set the stove to the lowest flame then bake for 1 hour.
  29. After 1 hour check the centre by dipping your index finger in cooled boiled water and touching it gently; if it feels firm it is cooked and can be taken out.
  30. Wait until it is not too hot before slicing so the cuts come out neat.
