Choux Puffs with Vanilla Rum Custard

Steps

  1. Prepare a saucepan, add 90 g sugar and 50 g cornstarch, and stir until evenly combined.
  2. Pour in a little milk while whisking until smooth with no lumps of starch left.
  3. Add 4 egg yolks, 1 tbsp rum and 1 tsp vanilla extract, then stir again until evenly combined.
  4. Pour in the remaining milk and stir until combined.
  5. Turn the stove to low heat and cook, stirring constantly, until the custard thickens and bubbles.
  6. Turn off the heat, add 2 tbsp butter and stir until evenly combined.
  7. Transfer the custard to another container, cover it with plastic wrap so no skin forms, then chill it in the fridge.
  8. Prepare a saucepan, add 125 g butter, 1/4 tsp salt and 300 ml water, then cook until boiling.
  9. Once it boils turn off the heat, pour in 150 g all purpose flour, and stir quickly until it forms a lump of dough.
  10. Turn the stove back on to low heat and keep stirring until the dough is smooth and comes together.
  11. Transfer the dough to a large bowl and let it cool until just warm, it does not need to be completely cold.
  12. Add 4 eggs one at a time, beating at medium speed until each egg is incorporated.
  13. Once all the eggs are in, beat again until the dough is smooth and glossy.
  14. Transfer the dough into a piping bag fitted with a nozzle.
  15. Pipe the dough onto a tray lined with baking paper in the size you want.
  16. Bake at 200 degrees Celsius with top and bottom heat for 18 minutes, then change to 160 degrees Celsius for 12 minutes; preheat the oven 10 minutes beforehand.
  17. Cool the puffs on a cooling rack.
  18. Whisk the chilled custard until it is smooth again, then put it into a piping bag with a nozzle.
  19. To fill, cut around the side of the puff without cutting all the way through, then pipe the custard inside.
  20. For the second method, poke the bottom of the puff with a chopstick then pipe the custard in from underneath.
