Fruit-Topped Cream Puffs

Steps

  1. Prepare a pot and add 60 g cornstarch, 160 g granulated sugar, a quarter teaspoon of salt, 2 egg yolks, 1 tsp vanilla and 800 ml liquid milk, then stir until evenly combined.
  2. Cook over medium heat, stirring constantly, until it boils, thickens and bubbles, then turn off the heat.
  3. Add 2 tbsp margarine, then stir until the margarine melts and is evenly combined.
  4. Keep stirring until the steam has gone, transfer the custard to another bowl, then press plastic onto the surface so it does not form a skin.
  5. Prepare another pot and add 125 g margarine, 1 tbsp granulated sugar, half a teaspoon of salt and 200 ml water, then cook until it boils and the margarine melts.
  6. Add 150 g wheat flour, turn the heat down, then stir until the dough is evenly combined and comes away cleanly.
  7. Turn off the heat, transfer the dough to another bowl, spread it out, then leave it for about 10 minutes until cool.
  8. Once the dough is cool, add the eggs one at a time while beating on the lowest speed until evenly combined.
  9. Keep adding the remaining egg, then beat until the mixture is evenly combined and feels heavier.
  10. Put the mixture into a piping bag and snip a little off the tip, not too wide because the dough expands while baking.
  11. Grease muffin or bowl-shaped moulds thinly with margarine.
  12. Pipe the mixture into the moulds in a spiral, filling them only three quarters full, then repeat until finished.
  13. Preheat the oven for about 10 minutes, then bake for about 20 minutes without opening the door so the puffs rise firmly and do not collapse.
  14. Once they are done, take the tray out of the oven, then bake the remaining mixture.
  15. Let the puffs cool until just warm before turning them out of the moulds.
  16. Stir the cooled custard, then put it into a piping bag.
  17. Pipe custard into each puff until full, then repeat until finished.
  18. Top with pieces of fruit such as mandarin orange, kiwi and grapes on the custard.
  19. For a glossy finish, prepare a pot and add 1 tsp white agar-agar powder, 1 tsp granulated sugar and 100 ml water, stir well, then cook until it boils.
  20. Turn off the heat and leave it briefly until the steam has gone.
  21. Spoon the agar-agar glaze over the fruit.
