Steps

  1. Put 250 g medium-protein flour, 10 g icing sugar, 125 g margarine and 1/2 tsp salt into a bowl.
  2. Rub the mixture together until it is evenly combined and looks like coarse sand.
  3. Add 5 tbsp iced water, then knead the dough until it comes together and is shapeable; if it is still too dry add 1 more tbsp of iced water.
  4. Grease the tart tins thinly with margarine.
  5. Roll about 30 g of dough for each round tin and about 16 g for each oval tin, then press the dough firmly into the tins to line them.
  6. Prick the base of the dough with a fork so it does not puff up while baking.
  7. Bake on the middle rack of a preheated oven at 170 degrees Celsius with top and bottom heat for about 25 minutes until the shells are baked and golden.
  8. Take them out of the oven and let them cool, or at least become just warm, then turn the tins over to release the shells.
  9. For the custard, mix 30 g cornstarch with 20 g custard powder, pour in part of the 500 ml milk, then stir until smooth and lump-free.
  10. Stir that mixture into 5 egg yolks, add 1 tsp vanilla, then stir until evenly combined and set aside.
  11. Put 100 g granulated sugar and the remaining milk into a pot, then cook over medium heat until it boils and the sugar dissolves.
  12. Once it boils, stir the egg yolk mixture first, then pour it into the pot and cook, stirring constantly, until it boils and thickens.
  13. Once it boils and bubbles up, turn off the heat, add 1 tbsp margarine, then stir until the margarine melts and is evenly mixed in.
  14. Cover the pot and let the steam escape so no skin forms on the custard, then transfer the custard into a piping bag.
  15. Pipe custard into each tart shell, then arrange pieces of kiwi, grape, strawberry and mandarin orange on top.
  16. For the glaze, put 1 tsp plain agar-agar powder and 1 tsp granulated sugar into a pot, stir, then pour in 100 ml water.
  17. Cook over medium heat until it boils, turn off the heat, then keep stirring until the steam has gone.
  18. Spoon about 1 tsp of the warm agar glaze over each tart so the fruit looks glossy.
