Ingredients

Pastry:

Custard:

Steps

  1. Prepare a bowl and add 12 and a half tablespoons of wheat flour, 1 tbsp powdered sugar and 5 tbsp margarine.
  2. Rub it together until evenly combined and the mixture looks like coarse sand.
  3. Add 1 egg yolk and 1 tbsp iced water, then stir again until evenly combined.
  4. Knead briefly by hand until the dough is smooth, soft and ready to shape.
  5. Grease a 24 cm non-stick pan thinly with margarine.
  6. Put the dough into the pan and press it out to fit the pan, not too thick so it cooks through.
  7. Press the rim with your fingers, a spoon or crimping tongs so it looks neat.
  8. Prepare a bowl and add 2 egg yolks, 1 egg white and half a teaspoon of vanilla powder, then stir until evenly combined.
  9. Add 2 sachets of condensed milk, then stir until evenly combined.
  10. Dissolve 2 tbsp cornstarch in 10 tbsp water, then pour it into the custard mixture and stir until evenly combined.
  11. Turn the heat to the lowest setting, set an old baking tray and a steamer rack on the stove so the flame does not touch the pan directly, then set the pan of dough on top.
  12. Strain the custard as you pour it into the pan, to make sure there are no lumps.
  13. Cover the pan, preferably with a glass lid, so steam does not drip into the pie.
  14. Bake it for about 40 to 45 minutes over low heat until the pie is cooked.
  15. After 40 minutes, uncover the pan and touch the crust and the custard; if they are firm and not sticky it is done, then turn off the heat and lift the pan off.
  16. Leave the pie in the pan until warm or cold, then slide it out with a spatula.
  17. Slice the milk pie and serve.
