Ingredients

Steps

  1. Prepare a bowl, add 11 tbsp rice flour, 4 tbsp cornstarch, 2 tbsp wheat flour, 6 tbsp granulated sugar and half a teaspoon of salt, then stir until evenly combined.
  2. Add 1 lightly beaten egg and 37 tbsp liquid milk.
  3. Stir the batter until the sugar dissolves and the batter is smooth, silky and free of lumps.
  4. Strain the batter to make sure there are no lumps.
  5. Add half a teaspoon of baking soda, then stir again until evenly combined.
  6. Cover the batter with a clean cloth and rest it for about 30 minutes.
  7. After 30 minutes, uncover the batter and stir it briefly.
  8. Heat a non-stick pan over low heat, then brush it thinly with margarine.
  9. Pour in about one soup spoon of batter, then swirl the pan so the batter forms a circle that runs up the side of the pan.
  10. Scatter chocolate sprinkles over the batter, placing them slightly off centre so it is easier to fold later.
  11. Cook over low heat until the crepe dries out and the edges are golden brown, which makes it crisp.
  12. Loosen the edges with a heatproof spatula, fold the crepe in half, then fold it again in the middle, pressing with a spoon.
  13. Lift out the leker, then cook the rest of the batter the same way until it is all used up.
  14. The topping may be changed to taste, using cheese, banana or jackfruit instead.
