Ingredients

Crust ingredients:

Steps

  1. For the milk filling, stir 4 medium eggs, 1 egg yolk, 120 g sweetened condensed milk, and 1 tsp vanilla until evenly combined, then set aside.
  2. Boil 100 g granulated sugar with 250 ml water over medium heat, stirring occasionally, until the sugar dissolves and the water boils, then turn off the heat.
  3. Pour the sugar syrup in while it is still hot into the egg mixture, whisking constantly until evenly combined.
  4. Strain the milk mixture and set it aside.
  5. For the crust, beat 40 g powdered sugar, 100 g margarine, and 1 egg yolk on medium speed for about 2 minutes until evenly combined and slightly aerated.
  6. Sift 210 g low-protein flour and 20 g milk powder into the mixture, stir with a spatula, then knead by hand until the dough is soft.
  7. Grease the pie molds thinly with margarine, add a little dough to each, press and pack it to the shape of the mold, then neaten the edges.
  8. Prick the bottom of the dough with a fork so the filling does not bubble up while baking.
  9. Pour the milk mixture into the molds until they are almost full.
  10. Bake in an oven preheated for 10 minutes at 180 degrees Celsius with bottom heat only for about 40 minutes, then continue with top and bottom heat for about 10 minutes until the filling is cooked and the surface has set.
  11. Take the tray out of the oven, let it cool completely, then flip the molds to release the pies.
