  1. For the custard, combine granulated sugar, vanilla paste, salt, cornstarch, milk and egg yolks, then whisk until smooth.
  2. Cook the custard over medium heat, stirring constantly, until it boils, thickens and bubbles.
  3. Take it off the stove and, while still hot, add 30 g margarine and stir until it melts and blends in.
  4. Transfer the custard to a container, cover it with plastic or a cloth so the surface does not dry out, then set it aside.
  5. For the choux shells, cook margarine, 200 ml water, 1/4 tsp salt and 1 tbsp granulated sugar over medium heat until the margarine melts and the mixture boils, then stir it smooth.
  6. Turn the heat down, add 150 g flour, then keep stirring over low heat until the dough pulls away from the pan.
  7. Take the dough off the heat, transfer it to a bowl, spread it out and rest it about 15 minutes until it is only warm.
  8. Once warm, add 3 eggs one at a time, mixing briefly on low speed after each one until the dough is smooth.
  9. Transfer the dough into a piping bag fitted with a nozzle.
  10. Pipe the dough into choux cups brushed lightly with margarine, or onto a tray lined with baking paper.
  11. Preheat the oven for 10 minutes at 200 degrees Celsius with top and bottom heat.
  12. Bake the puffs for 30 minutes at 200 degrees Celsius until risen and cooked, then take them out of the oven.
  13. Transfer the cooled custard into a piping bag.
  14. Release the puffs from their cups, snip the centre open, then pipe the custard into the cavity.
