Chewy Choux Puffs with Durian Custard

  1. Whisk the egg yolks with the cornstarch, granulated sugar, salt, and vanilla until evenly combined.
  2. Pour in the liquid milk and whisk until the mixture is completely smooth.
  3. Blend the durian flesh briefly so it does not stay lumpy, then add it to the mixture.
  4. Cook over low heat while stirring constantly until the custard thickens and bubbles, then cook it another 30 seconds.
  5. Take it off the heat, stir in the unsalted butter, then transfer it to a plate.
  6. Cover the custard with plastic touching the surface, then chill it until cold.
  7. Bring the liquid milk, vegetable oil, salt, and sugar to a boil in a pot, then turn off the heat.
  8. Let the pot sit for about 2 minutes so the temperature drops slightly.
  9. Add the medium protein flour and the tapioca flour, then stir until the mixture is completely smooth.
  10. Put the pot back on low heat and cook while stirring until the dough dries out and pulls away from the pan.
  11. Transfer the dough to a bowl and wait until it is no longer hot.
  12. Preheat the oven to 190 to 200 degrees.
  13. Beat 2 eggs, then add them to the dough a little at a time, mixing until it is smooth and pipeable.
  14. Transfer the dough to a piping bag with a plain round tip and pipe mounds of about 25 g.
  15. Smooth the tops with wet fingers so there are no peaks.
  16. Bake at 190 degrees for 10 minutes, then lower to 160 to 170 degrees and bake for another 20 to 25 minutes until dry and hollow.
  17. Loosen the chilled durian custard until it becomes a smooth cream, then transfer it to a piping bag.
  18. Poke a hole in the side of each puff and fill it with the durian custard until full.
