Ingredients

Steps

  1. Prepare a bowl and add 2 eggs and 60 gr of granulated sugar, stir until evenly combined and creamy, then add 25 gr of cornstarch and stir again until evenly combined.
  2. Prepare a pot, add 240 ml of liquid milk, and heat it over medium-low heat until hot; it does not need to boil, then take it off the stove.
  3. Pour the hot milk into the egg mixture a little at a time while stirring until evenly combined.
  4. Pour the mixture back into the pot, turn on low heat, then cook until it boils and thickens while stirring constantly so it does not scorch.
  5. Once the mixture bubbles up, boils, and thickens, take it off the stove and transfer it into another container while still hot.
  6. Cover the custard with plastic wrap pressed directly onto its surface so the top does not form a skin or dry out.
  7. Put it in the fridge and let it cool for about two hours.
  8. Prepare a bowl, add 180 gr of liquid whipping cream, and whip at maximum speed until risen and thick.
  9. After 2 hours, take the custard out of the fridge, add 1 tsp of vanilla, then beat it until creamy again.
  10. Add the custard into the bowl of whipped cream, then beat at maximum speed until evenly combined.
  11. Transfer the cream into a piping bag then keep it in the fridge for about one hour.
  12. For the craquelin, prepare a bowl and add 50 gr of margarine and 50 gr of palm sugar, then stir until evenly combined.
  13. Add 50 gr of wheat flour then stir again until evenly combined.
  14. Place the dough between sheets of baking paper or clear plastic, then roll it out with a rolling pin to about 0.2 cm thick.
  15. Put the craquelin into the freezer for about 30 minutes.
  16. For the choux pastry, prepare a pot and add 130 ml of water, 50 gr of margarine, and 1/4 tsp of salt.
  17. Turn on low heat and cook until the water boils and the margarine melts, then turn off the heat and take the pot off the stove.
  18. While it is still hot, add 70 gr of wheat flour then stir until evenly combined with no lumps of flour left.
  19. Turn the heat to its lowest and cook the dough for about 30 seconds while stirring constantly, then transfer it to another bowl and let it cool for about 10 minutes.
  20. Once the dough is cool, move it to a larger bowl, add 1 egg, and stir until evenly combined.
  21. Add another egg then stir until the dough is smooth and glossy.
  22. Transfer the dough into a piping bag fitted with a nozzle, then line a tray with baking paper.
  23. Pipe out portions of dough on the tray, spacing them apart so they do not stick together as they puff up.
  24. Take the frozen craquelin out of the freezer, then cut out rounds slightly larger than the piped choux.
  25. Place a craquelin round on the centre of each choux and press lightly so it sticks, then repeat until finished.
  26. Preheat the oven for about 10 minutes, put in the tray, then bake at 180 degrees Celsius for about 35 minutes until the puffs are done and the tops are firm.
  27. After 35 minutes, touch the tops to test; if they are firm the puffs are done, so take them out of the oven.
  28. Once the puffs are cool, make a hole in the bottom with a nozzle or a knife, or cut them in half.
  29. Pipe the chilled vanilla cream into the puffs until full, then repeat until finished.
