Ingredients

Choux Shell:

Chocolate Custard:

Steps

  1. Turn on medium heat, prepare a pot or pan, then add 200 ml water, 1 tbsp granulated sugar and 125 g margarine.
  2. Cook until the water boils and the margarine melts, then turn off the heat.
  3. Add half a teaspoon of salt and 150 g wheat flour, then stir with a wooden spatula until the dough is evenly combined, smooth and lump-free.
  4. Transfer the dough to another bowl and spread it out so the steam escapes faster, then rest it for about 10 minutes until cool.
  5. Add 3 eggs and 1 tsp baking powder, then beat on the lowest speed for about three minutes until the mixture is thick and evenly combined.
  6. Put the mixture into a piping bag, snip a little off the tip, then slide it inside another bag fitted with a nozzle.
  7. Pipe small mounds onto a baking tray greased with margarine, keeping them small so the puffs dry out while baking.
  8. Preheat the oven for about 10 minutes, place the tray on the middle rack, then bake at 180 degrees Celsius with top and bottom heat for about 20 minutes.
  9. After 20 minutes, lower the oven to 125 degrees Celsius and bake for about five more minutes so the puffs get crisper.
  10. Once the puffs are lightly browned and done, take the tray out of the oven.
  11. Let the steam escape, then store the puff shells in an airtight jar so they stay crisp and keep well.
  12. For the chocolate custard, prepare a bowl and add 1 tbsp cocoa powder, 10 g cornstarch and 50 g granulated sugar, then stir until evenly combined.
  13. Add 150 ml liquid milk, then stir again until evenly combined and the sugar dissolves.
  14. Strain the mixture to make sure there are no lumps.
  15. Turn on medium-low heat and cook, stirring constantly, until the custard thickens, boils and bubbles.
  16. Turn off the heat, add 50 g dark cooking chocolate chopped small, then stir until the chocolate melts and is evenly combined.
  17. Let the chocolate custard cool, then put it into a piping bag.
  18. Make a hole in each puff with a skewer and pipe the custard inside, or simply serve the custard as a dip.
