Hoicho, Teochew Crab and Pork Beancurd Rolls

  1. Kill the crab by piercing the middle of its underside, then wait until it stops moving before untying it.
  2. Wash the crab under running water and scrub the shell and the gaps between the legs.
  3. Steam the crab over already boiling water for about 20 minutes until the shell turns orange red.
  4. Meanwhile, soak 2 shiitake mushrooms until soft.
  5. Peel the jicama.
  6. Weigh out 200 g jicama and cut it into small dice; do not grate it or the mixture turns watery.
  7. Thinly slice 2 stalks of spring onion.
  8. Squeeze the water out of the shiitake, discard the stems, then dice them small.
  9. Once the crab is cooked, wait until it is no longer too hot to handle.
  10. Pull off the back shell, split the crab in half, then pull out and clean off the gills.
  11. Crack the shell by tapping it with a knife so the meat comes out more easily.
  12. Pick out all the crab meat.
  13. Weigh the meat; a 1.3 kg crab yields about 400 g, of which only 250 g is used here.
  14. Boil 300 g of pork neck for about 10 minutes to render off some of the excess fat.
  15. Cut the pork into small dice; do not mince it finely, so the filling stays fibrous.
  16. Take a large bowl and add 250 g of crab meat.
  17. Add the diced pork and 200 g of jicama.
  18. Add the shiitake and spring onion.
  19. Add 1/2 tbsp salt, 1/2 tsp pepper, 1 tsp mushroom stock powder and 1/2 tbsp Sichuan pepper.
  20. Add the eggs, then mix until evenly combined.
  21. Add 115 g plain flour and mix again until evenly combined.
  22. If the mixture is still too dry and not sticky enough, add another egg, up to 3 in total.
  23. Snip 5 pandan leaves into thin long strips to use as ties.
  24. Cut the beancurd sheets into rectangles.
  25. If the beancurd sheets have dried out, press them between damp clean cloths until they turn pliable again.
  26. Spoon some filling onto a beancurd sheet, then brush a little of the mixture along the edge to seal it.
  27. Roll it up while evening out the filling.
  28. Tie off each end with a strip of pandan leaf; do not tie too tightly or the sheet will split as the filling expands.
  29. Push the filling along before each tie so the roll comes out rounder.
  30. Arrange the rolls in a steamer over boiling water, leaving space so they do not stick together.
  31. Steam for 25 minutes over medium heat, or until cooked through.
  32. Once cooked, wait until they are no longer too hot, then lift them out and let them cool.
  33. Cut them into pieces and remove the pandan ties; they can also be frozen for later.
  34. Make sure the oil is properly hot before adding the hoicho.
  35. Deep fry over medium high heat, stirring constantly and using plenty of oil so they colour evenly golden brown.
  36. Serve with kit iu dipping sauce.
