Kiam Lala, Savoury Jicama Filled Crepes

Steps

  1. Put 2 large chilies, 8 bird's eye chilies, 2 cloves of garlic, half a tablespoon of roasted shrimp paste and 150 ml water into a blender then blend until smooth.
  2. Pour the blended mixture straight into a pot, then rinse the blender jar with the remaining 50 ml water and add that too.
  3. Add 1 tbsp sugar and 1 tsp salt, then cook over medium heat until it boils.
  4. Once it boils lower the heat and cook for another 2 to 3 minutes, then add 1 tbsp vinegar, stir briefly, and turn off the heat.
  5. Strain the sambal to remove the solids then set it aside.
  6. Grate 1 kg of jicama and 50 g of carrot using a straight blade grater so the shreds have more volume.
  7. Finely chop 8 cloves of garlic and roughly chop a handful of dried shrimp, about 20 g.
  8. Prepare a wok, pour in enough oil, then fry the garlic until golden brown over low heat so it does not burn quickly.
  9. Take it off the stove straight away then drain the fried garlic separately from its oil.
  10. Take about 2 heaping teaspoons of the fried garlic and mix it with the garlic oil for the filling.
  11. Prepare a wok, heat enough oil, then add the dried shrimp and saute until fragrant and very bubbly.
  12. Add the jicama and carrot then stir briefly.
  13. Once it has wilted enough add 2 tsp salt, half a teaspoon of pepper, 1 tsp mushroom bouillon and 1 tbsp sugar, stirring until combined without adding any water at all.
  14. Once wilted add the garlic oil along with the fried garlic, stir until combined, then turn off the heat.
  15. Take it off and transfer it to a strainer so the liquid drains out of the jicama.
  16. Combine 200 g all purpose flour, 30 g tapioca starch and half a teaspoon of salt, then stir briefly.
  17. Pour in half the water while stirring.
  18. Add 1 egg then whisk until evenly combined.
  19. Once there are no lumps of flour left, add all the remaining water then stir until combined.
  20. Finally add 1 tbsp vegetable oil then stir quickly until the oil is fully incorporated and none is floating on top.
  21. Strain the batter to make sure there are no lumps of flour left.
  22. Prepare a non stick pan, turn the stove to very low heat, then warm the pan only until it is warm.
  23. Pour in the batter then spread it out straight away before it sets.
  24. Wait until the edges dry and lift away by themselves, then take it off the stove and lay it on a work surface.
  25. Place the filling on the crepe then fold it, trimming off the dry edges, and close it up.
  26. Serve topped with fried garlic and drizzled with the shrimp paste sambal.
