  1. Prepare about 100 g of Japanese spinach leaves, using only the leaves.
  2. Finely chop the leaves.
  3. Prepare a heatproof container about 20 to 25 cm across and line it with heatproof cling film.
  4. Put the chopped spinach into the container, then spread it out evenly.
  5. Prepare 750 ml of unsweetened or plain soy milk.
  6. Prepare the same volume of egg, about 750 ml or roughly 12 to 14 eggs, since the ratio of egg to soy milk is one to one.
  7. Crack the eggs into a measuring jug so you can measure the volume.
  8. Beat the eggs lightly, there is no need to whip them until fluffy.
  9. Add 1 tsp mushroom stock powder and 1 tsp salt.
  10. Pour the soy milk into the bowl with the eggs.
  11. Whisk until the soy milk and eggs are fully combined.
  12. Strain the mixture into a bowl so the texture comes out smooth.
  13. Strain it again and pour it slowly straight into the container with the chopped spinach so the spinach floats up and forms a nice layer.
  14. Cover the mould with aluminium foil if you are worried about condensation dripping in.
  15. Steam for 30 minutes over low heat.
  16. Once cooked, let it rest for 2 to 3 hours so it is easy to cut and does not fall apart.
  17. For the sauce, prepare 2 tbsp oyster sauce.
  18. Add 1 tbsp thick salty soy sauce, or use regular light soy sauce if you do not have it.
  19. Add 1 tsp mushroom stock powder.
  20. Add 1 tsp sugar.
  21. Add 2 tsp sesame oil.
  22. Add 1/2 tsp ground white pepper, then stir until the sugar dissolves.
  23. Prepare 1 pack of brown shimeji mushrooms.
  24. After 2 hours, once the tofu has cooled, lift the cling film and turn it out of the mould.
  25. Cut the tofu into pieces of whatever size you like.
  26. Heat a nonstick pan, add vegetable oil, then bring it up to high heat.
  27. Add the tofu without crowding the pan so the oil temperature does not drop, then fry over high heat until golden, and not too long or it dries out.
  28. For the sauce, heat 2 tbsp vegetable oil in a wok.
  29. Add 5 cloves of garlic cut into large pieces, then saute until fragrant and lightly golden.
  30. Add the shimeji mushrooms, then stir fry for just a minute over high heat.
  31. Add 1 1/2 tbsp Shaoxing wine, then cook briefly.
  32. Pour in the sauce mixture you made earlier.
  33. Pour in 500 ml of water, then let it come to a boil.
  34. Thicken the sauce with a cornstarch and water mixture until you get the consistency you want, then taste it.
  35. Pour the sauce over the fried tofu and serve.
