Steps

  1. Prepare a large enough bowl then combine 300 g butter and 100 g margarine.
  2. Beat at high speed for 10 minutes until the mixture is white and soft, scraping the sides occasionally so it whips evenly.
  3. In another mixing bowl combine 30 egg yolks with 250 g powdered sugar.
  4. Beat at high speed for 15 minutes until thick enough to leave a trail.
  5. In a clean bowl add 6 egg whites then beat at medium speed until very foamy.
  6. Add 100 g powdered sugar gradually and beat at high speed until it reaches stiff peaks.
  7. Fold a third of the beaten egg whites into the yolk batter, then add the rest in stages until all of it is in.
  8. Take out about a third of that egg white and yolk mixture into another bowl.
  9. Sift 10 g cocoa powder and 10 g flour into that third of the batter, then stir until evenly combined.
  10. Add 1 tsp vanilla extract, 2 tsp chocolate paste and 200 g chocolate condensed milk, then stir again until evenly combined.
  11. Pour that chocolate batter into the butter mixture then stir again until evenly combined.
  12. Add the remaining egg white and yolk mixture, then fold again until evenly combined.
  13. Prepare a square 20x20 cm pan that is 7 cm deep and lined with baking paper.
  14. Turn the oven on to 175 degrees Celsius with top and bottom heat on the lower rack, then put the empty pan in for 5 minutes.
  15. Prepare a medium container and a small one, moving some batter into the medium one so the batter in the big bowl is not stirred often.
  16. Take batter from the medium container into the small one and weigh out 85 g.
  17. Take the hot empty pan out of the oven, pour in the batter, then spread it across the whole base of the pan.
  18. Put it into the oven and bake until the surface of the layer is browned.
  19. While the first layer bakes, weigh out the same amount of batter for the second layer.
  20. Once the first layer is done take it out of the oven, then for the second layer onward change to 190 degrees Celsius with top and bottom heat.
  21. If any part of the surface bubbles up press it down lightly, then pour more batter over the first layer and spread it across the whole pan.
  22. Move the rack to the middle position for the second layer onward, then bake for roughly eight to nine minutes or until browned.
  23. Repeat the same steps until all the batter is used.
  24. Before moving batter from the big bowl into the medium one, stir it first because butter and chocolate will have settled out.
  25. If bubbles or lumps appear on the surface of the batter, prick them with a toothpick while the batter is still wet.
  26. For the last layer move it to the lower rack and bake at 190 degrees Celsius with top heat.
  27. Once the surface is cooked and browned, switch to top and bottom heat and bake for another 5 minutes.
  28. Press the surface of the last layer lightly, then leave the cake in the pan for about one to two hours.
  29. Turn the cake out of the pan then peel off the baking paper.
  30. Leave the cake upside down overnight before slicing.
