Ingredients

Steps

  1. Grease a 25 x 30 cm tin fitted with dividers with a thin layer of margarine, then line it with baking paper and set it aside.
  2. Put the eggs, egg yolk, sugar, emulsifier, and vanilla into a bowl.
  3. Add the wheat flour, cornstarch, and milk powder, sifting them in so there are no lumps.
  4. Beat for about 7 to 10 minutes until the batter is pale, risen, thick, and holds a ribbon; start on low speed then raise it to maximum.
  5. Pour in the melted margarine, then fold gently from the bottom up until no liquid is left settling in the batter.
  6. Divide the batter into three equal parts.
  7. Mix the cocoa powder with the chocolate paste, then dissolve them in hot water and stir until smooth.
  8. Stir a little of the batter into the chocolate mixture, then pour it into one part of the batter and mix until evenly combined.
  9. Pour each batter into the tin, then tap the tin several times so the trapped air can escape.
  10. Bake in a preheated oven for about 25 minutes until browned and a skewer comes out clean.
  11. Take the tin out of the oven, then turn the cakes out of the tin.
  12. Peel the baking paper off the cakes.
  13. Spread the cakes with jam or buttercream and level it with a spatula; if using buttercream let the cake cool first so the cream does not melt.
  14. Stack the layers with the chocolate one in the middle, then press the surface gently so the layers stick together.
  15. Slice the cake as you like, then serve.
