Ingredients

Steps

  1. Mix 1 tbsp all-purpose flour, 1 tbsp margarine and 1 tbsp cooking oil until smooth to make the tin coating.
  2. Brush a 24 cm tin thinly with the coating, then set it aside.
  3. Put 5 eggs, 200 g granulated sugar and 1 tsp SP emulsifier into a bowl.
  4. Beat at maximum speed for about 10 minutes until the batter is pale, voluminous, thick and leaves a ribbon trail.
  5. Sift 180 g all-purpose flour, 1/2 tsp baking powder and 20 g cornstarch into the batter.
  6. Fold briefly so the flour does not fly out, then mix for about 30 seconds on the lowest speed until evenly combined.
  7. Turn off the mixer, then continue folding with a spatula to make sure the flour is fully incorporated.
  8. Add 150 g melted margarine, then fold from the bottom up until no melted margarine is left settled in the batter.
  9. Take 2 tbsp of the batter, add a little chocolate paste, then stir until evenly combined to make the marbling.
  10. Pour the main batter into the tin, level it with a spatula, then tap the tin a few times so trapped air can escape.
  11. Pour the chocolate batter on top, then swirl it into a pattern as you like.
  12. Bake on the lowest rack of a preheated oven at 160 degrees Celsius with top and bottom heat for about 30 minutes until the cake is done.
  13. Test the cake with a skewer; if no batter clings to it the cake is baked, then take the tin out of the oven.
  14. Turn the cake out of the tin carefully since it is still hot, then cut and serve it once it is just warm.
