Ingredients

Chocolate Filling:

Steps

  1. Make the chocolate filling: in a saucepan combine 30 gr granulated sugar, 15 gr cornstarch and 15 gr cocoa powder, then stir until evenly mixed.
  2. Pour in 200 ml liquid milk and stir until the mixture is smooth, silky and free of lumps.
  3. Cook over medium heat until it boils and thickens, stirring constantly so the bottom does not turn lumpy.
  4. Once it boils and bubbles up, add 65 gr dark cooking chocolate chopped small, then cook until the chocolate melts and blends in evenly.
  5. Turn off the heat, let the filling cool completely, then set it aside.
  6. In a mixing bowl combine 200 gr granulated sugar, 6 eggs and 1 tsp emulsifier.
  7. Beat on maximum speed for about 10 minutes until the batter is risen, thick and holds a trail, then switch off the mixer.
  8. Sift 275 gr all-purpose flour together with 25 gr cornstarch and add it to the batter in stages, folding briefly each time before mixing on the lowest speed just until combined.
  9. Once all the dry ingredients are in, pour in 175 ml liquid milk and keep mixing until the batter is evenly combined.
  10. Continue folding the batter with a spatula to make sure it is thoroughly combined.
  11. Add 125 gr melted margarine and fold gently from the bottom up until evenly mixed with no liquid settling at the base.
  12. Separate out about 200 gr of the batter, stir in 10 gr cocoa powder, and mix until evenly coloured.
  13. Grease a 24 cm round tin, then pour in the plain batter to fill one third of the tin.
  14. Pour the chocolate batter over the plain batter.
  15. Place the tin in a steamer whose water is already boiling and steam for about 10 minutes over medium heat, lining the steamer lid with a clean cloth.
  16. Open the steamer, pipe the chocolate filling over the cake, then cover it with the remaining plain batter and the remaining chocolate batter.
  17. Continue steaming over medium heat for about 35 minutes until the cake is cooked through.
  18. Test with a skewer; if no batter clings to it the cake is done, then lift it out and turn the cake out of the tin while still hot.
  19. Slice the cake and serve.
