Topping:

Steps

  1. Put 120 g granulated sugar, 3 medium eggs, and 1 tsp emulsifier into a bowl.
  2. Beat at maximum speed for about 8 minutes until the batter is risen, thick, and ribbon-forming.
  3. Add 30 ml cooking oil, 70 ml liquid milk, 40 g sweetened condensed milk, and 1 tsp vanilla.
  4. Mix for about 30 more seconds on the lowest speed until evenly combined.
  5. Sift 120 g wheat flour, 15 g cornstarch, 1/2 tsp baking powder, and 1/4 tsp salt into the batter.
  6. Stir briefly so the flour does not fly about, then mix for about 30 seconds on the lowest speed.
  7. Carry on folding with a spatula from the bottom up until no liquid is left settled at the bottom.
  8. Divide the batter into two equal portions.
  9. Add 1 tsp taro paste to one portion and fold gently until evenly combined, leaving the other portion plain.
  10. Pour the colored batter into a 25x10 cm tin greased with cooking oil and lined with baking paper.
  11. Level the batter with a spatula, then tap the tin a few times to release the trapped air.
  12. Steam for about 15 minutes on medium heat over already boiling water, with the steamer lid wrapped in a clean cloth.
  13. Open the steamer lid, then pour the remaining batter into the tin.
  14. Carry on steaming for about 20 minutes until the cake is done, then do a skewer test.
  15. Lift the tin out of the steamer, then turn the cake out and peel off the baking paper while it is still hot.
  16. For the milk topping, put 100 ml liquid milk, 40 g sweetened condensed milk, and 1 tbsp cornstarch into a pan, then stir until evenly combined.
  17. Cook over medium heat, stirring constantly, until it boils and thickens, then turn off the heat.
  18. Pour the milk topping over the cake, spread it with a spoon or spatula, then scatter over the grated cheese.
  19. Slice the cake and serve.
