Ingredients

Steps

  1. In a pot, add 1750 ml medium thick coconut milk and 2 pandan leaves.
  2. Cook over medium heat until boiling while stirring constantly so the coconut milk does not split, then turn off the heat and leave it to cool.
  3. In a bowl, add 625 g tapioca flour, 125 g wheat flour, 1 tsp salt, 400 g granulated sugar, and 1 tsp vanilla.
  4. Pour in part of the cooled coconut milk, then stir until the batter is smooth and slick, the sugar has dissolved, and there are no lumps.
  5. Pour in the rest of the coconut milk, then keep stirring until evenly combined.
  6. Divide the batter into three equal parts.
  7. Stir 1 tsp pandan paste into one part and 1/2 tsp pandan paste into the second; leave the third part white.
  8. Grease the tin thinly with cooking oil.
  9. Pour about 150 ml of batter into the tin for the first layer.
  10. Put the tin into the steamer with the water already boiling, line the flat steamer lid with a clean cloth, then steam for about 5 minutes over medium heat.
  11. Once the layer has set, pour in the next colour and steam for about 5 minutes again; alternate the colours until all the batter is used.
  12. Steam the final layer for about 30 minutes so the cake cooks through, then lift the tin out of the steamer.
  13. Leave the cake to cool for about 4 to 5 hours, then run a knife around the edge and turn the cake out of the tin.
  14. Wrap the knife in plastic so the cake does not stick to it, then slice the cake and serve.
