Ingredients

🎀White Layer:

Steps

  1. Prepare a pot, add 550 g granulated sugar, 1/2 tsp salt, 1600 ml medium-thick coconut milk, 2 pandan leaves and 1 tsp vanilla, then stir until evenly combined.
  2. Cook the coconut milk over medium heat until it boils, stirring constantly so it does not split.
  3. Once it boils turn off the heat, let the coconut milk cool to lukewarm, then divide it into 3 equal parts.
  4. For the white batter, mix 165 g tapioca starch, 85 g rice flour and 1/2 tsp white food colouring, then stir until even.
  5. Pour in one part of the coconut milk a little at a time while stirring until evenly combined, then set aside.
  6. For the green batter, mix 165 g tapioca starch and 85 g rice flour, then pour in one part of the coconut milk a little at a time while stirring until even.
  7. Add 1/2 tsp pandan paste and about 5 drops of green food colouring if the colour is not bright enough, then stir until evenly combined.
  8. Make one more batch of green batter the same way using the remaining coconut milk.
  9. Strain all the batters to make sure there are no lumps.
  10. Grease a 20 by 20 cm tin thinly with cooking oil, then place it in the steamer whose water is already boiling.
  11. Pour 150 ml of green batter into the tin and steam about 7 minutes over medium heat; wrap the steamer lid in a clean cloth so condensation does not drip onto the batter.
  12. Once the layer is set and does not stick to a spoon, pour in another 150 ml of batter and steam 7 minutes; repeat until one portion of batter makes 5 layers.
  13. Continue with the white batter and then the green batter the same way until there are 15 layers in total.
  14. Steam the final layer about 30 minutes until the cake is cooked through, then lift the tin out of the steamer.
  15. Let the cake cool completely, loosen the edges, then turn the cake out of the tin.
  16. Cut the cake with a knife wrapped in plastic so it does not stick, then serve.
