Ingredients

Steps

  1. Put the sugar, salt, pandan leaves, vanilla powder, and coconut milk into a pot, then stir until evenly combined.
  2. Cook over medium heat while stirring constantly so the coconut milk does not split, until it boils, then turn off the heat and leave it until completely cold.
  3. Put the tapioca flour and wheat flour into a bowl.
  4. Pour in the cooled coconut milk in stages while stirring until the batter is smooth, silky, and free of lumps.
  5. Strain the batter if any lumps remain.
  6. Divide the batter into three parts, two of about 880 ml each and one of about 330 ml.
  7. Add pandan paste and brown food colouring to one part so the colour is not too garish, then stir until evenly combined.
  8. Add about 10 drops of pink food colouring to the next part, then stir until evenly combined.
  9. Dissolve the white food colouring in one teaspoon of hot water, add it to the last part, then stir until evenly combined.
  10. Grease a 20 x 20 cm tin with a thin layer of cooking oil, then put it into a steamer with already boiling water.
  11. Pour about 110 ml of the green batter into the tin, then steam for about 4 to 5 minutes over medium heat until the surface is no longer wet.
  12. Pour in another 110 ml for the next layer then steam again for about 4 to 5 minutes; wrap the steamer lid in a clean cloth so condensation does not drip onto the batter.
  13. Carry on with the white batter, layer by layer, in the same way.
  14. Carry on with the pink batter, layer by layer, in the same way.
  15. For the final layer, steam for about 20 minutes or until the cake is cooked through, then take the tin out of the steamer.
  16. Leave the cake until completely cold before turning it out so it does not fall apart, then run a knife around the edges.
  17. Cut the cake with a knife wrapped in plastic so it does not stick.
