Ingredients

Steps

  1. Prepare a pot and add 625 g granulated sugar, half a teaspoon of salt and 1500 ml coconut milk, then stir until evenly combined.
  2. Add 1 pandan leaf, then heat over medium heat, stirring constantly, until the sugar dissolves; it does not need to boil so the coconut milk does not split.
  3. Turn off the heat and let the coconut milk cool.
  4. Prepare a bowl and add 625 g tapioca starch, 125 g wheat flour and half a teaspoon of vanilla powder, then stir until evenly combined.
  5. Add the cooled coconut milk gradually, a little at a time, stirring until evenly combined.
  6. Pour in the rest of the coconut milk, then stir again until the batter is smooth and silky.
  7. Take out about 200 ml of batter for the red top layer, then divide the rest into two equal parts.
  8. Leave one part white, then add 1 tsp pandan paste to the other and stir until evenly combined.
  9. Add about five drops of chilli red food colouring to the small portion, then stir until evenly combined.
  10. Grease a 20 x 20 cm tin thinly with cooking oil.
  11. Heat the steamer with the tin inside over medium heat.
  12. Once the steamer is hot, pour in 175 ml of the green batter and steam for about 5 minutes over medium heat until set and firm.
  13. After 5 minutes, touch it with a spoon; if it no longer sticks, pour in 175 ml of the white batter and steam for another 5 minutes.
  14. Keep pouring the green and white batters alternately until all of it is used up, stirring each batter before pouring.
  15. For the final layer, pour in the red batter and steam for 25 minutes over medium heat until the cake is cooked.
  16. After 25 minutes, lift the tin out of the steamer and leave the cake until cold.
  17. Loosen the edges by pressing gently or running a knife around them, then turn the cake out of the tin.
  18. Cut the layer cake with a knife wrapped in plastic so it does not stick to the cake.
