Ingredients

TOPPING : (to taste):

Steps

  1. Dissolve the instant yeast and sugar in warm water, then stir until combined.
  2. Cover the glass and leave it for about three to five minutes until the yeast rises and foams.
  3. Put the wheat flour, icing sugar, and milk powder into a bowl, then stir until evenly combined.
  4. Add the egg yolks and the activated yeast mixture, then stir until evenly combined.
  5. Knead the dough by hand until it is half smooth.
  6. Add a pinch of salt, the emulsifier, and the margarine.
  7. Knead again until the margarine is worked right through the dough; spread the dough out and press it as if squeezing it so the margarine blends in faster.
  8. Round the dough, put it in a bowl, then cover with plastic wrap or a clean cloth.
  9. Let it rest for about 40 to 60 minutes depending on the room temperature until the dough has risen.
  10. Punch the dough down to deflate it.
  11. Divide the dough into 20 pieces of about 20 grams each for mini doughnuts, or about 35 grams each for medium doughnuts.
  12. Roll each piece until smooth, then place them on baking paper in order, starting with the first one you rounded.
  13. Cover and rest the dough for about 30 minutes.
  14. Heat oil in a pan over medium low heat, then add the dough pieces starting with the first one you rounded.
  15. Fry and turn them only once, after the underside is golden brown, so the doughnuts do not soak up much oil.
  16. Once golden brown on both sides, lift them out and drain them in a single row on paper so they do not get dented, then fry the remaining dough.
  17. Let the doughnuts cool completely.
  18. Stir the doughnut glaze first with a fork or a skewer so the oil that has settled on top blends back in.
  19. Dip the top of a doughnut into the glaze, lift it out, then shake it gently so the glaze spreads evenly.
  20. Scatter over sprinkles or decorate with another colour of glaze using a piping bag with the tip snipped off.
