  1. Whisk 150 grams granulated sugar, 80 grams cornstarch, 2 egg yolks, 1/4 tsp salt, 1 tsp vanilla paste, and 800 ml liquid milk until evenly combined.
  2. Cook the custard over medium-low heat, stirring constantly, until thick and bubbling, then turn off the heat and take the pan off the stove.
  3. While still hot, beat 30 grams margarine into the custard until fully incorporated, then cover it so it does not form a skin.
  4. For the dough, combine 400 grams high-protein bread flour, 1 whole egg, 100 grams medium-protein all-purpose flour, 2 egg yolks, 10 grams milk powder, 80 grams powdered sugar, 1 tsp vanilla paste, 225 ml cold liquid milk, and 2 tsp instant yeast.
  5. Knead the dough with a mixer for 15 minutes on medium speed.
  6. Add 1 tsp salt and 100 grams margarine, then knead for another 15 minutes on medium speed until smooth and windowpane-tested.
  7. Round the dough up, then turn it out of the bowl.
  8. Weigh the dough into 50 gram portions, roll each one smooth, then line them up on a tray in order.
  9. Cover the portions and rest them for 60 minutes until risen.
  10. Fry the doughnuts in hot oil over the lowest heat for about 2 to 3 minutes until golden, turning them only once, then drain them.
  11. Melt 250 grams granulated sugar over low heat, swirling the pan until it caramelizes, keeping the flame low.
  12. Poke a hole in the side of each doughnut with a chopstick, then pipe the custard filling in from a piping bag.
  13. Dip each filled doughnut into the melted caramel.
  14. Spread the remaining doughnuts with buttercream, then finish them with chocolate sprinkles.
