Ingredients

Bomboloni Doughnut ingredients:

Vanilla Custard:

Chocolate Custard:

Steps

  1. Prepare a bowl and add 250 gr of high-protein wheat flour, 50 gr of medium-protein wheat flour, 20 gr of milk powder, and 50 gr of granulated sugar.
  2. Add 1 tsp of instant yeast then stir until evenly combined.
  3. Add 1 egg yolk and 180 ml of water, then mix for about 2 minutes until the dough comes together.
  4. Add 1/4 tsp of salt and 45 gr of margarine.
  5. Keep mixing for about 15 minutes at maximum speed until the dough is smooth and elastic, or knead by hand for about 15 to 20 minutes.
  6. Take a little dough and stretch it out; if it does not tear easily and turns translucent, the dough is smooth and elastic.
  7. Roll the dough into a ball then divide it into 14 portions of about 40 gr each.
  8. Roll each portion into a ball and cover the waiting portions with plastic so they stay moist.
  9. Press or roll each portion flat to break the air bubbles inside, then round it until it is smooth and even.
  10. Place the dough balls on paper dusted with flour so they do not stick, arranging them in the order they were rounded.
  11. Cover the dough with a clean cloth then rest it for about 40 to 60 minutes until doubled in size, being careful not to overproof.
  12. Turn on low heat then heat oil in a wok.
  13. Once the oil is hot, add a batch of bomboloni by simply flipping them off the paper.
  14. Fry until the underside is golden then turn them just once so they do not soak up much oil.
  15. Keep frying until both sides are golden, then lift them out and drain, and fry the rest of the dough.
  16. For the vanilla custard, prepare 4 egg yolks, add 20 gr of cornstarch, stir until evenly combined, and set aside.
  17. Prepare a pot and add 100 gr of granulated sugar, 150 ml of liquid whipping cream, and 150 ml of liquid milk.
  18. Add 1 tsp of vanilla then stir until evenly combined.
  19. Turn on medium-low heat and cook until warm and the sugar has dissolved, stirring constantly; it does not need to boil.
  20. Once it is warm and the sugar has dissolved, turn off the heat.
  21. Take a little of the milk mixture and pour it into the egg and cornstarch mixture, stir until combined, then pour it all back into the pot.
  22. Turn the heat back on low and cook until it boils and thickens, stirring constantly so the bottom does not scorch.
  23. Once it boils, thickens, and bubbles up, turn off the heat and let the vanilla custard cool.
  24. Once cool, transfer the vanilla custard into a piping bag.
  25. Poke a small hole in the side of each bomboloni with a chopstick, knife, or the tip of a spoon.
  26. Pipe in the custard, then roll the bomboloni in icing sugar, and repeat until all of them are filled.
