Ingredients

Coating and Filling:

Steps

  1. In a bowl combine 500 gr high-protein flour, 100 gr medium-protein flour, 100 gr powdered sugar, 40 gr milk powder, 2 tsp instant yeast, 2 egg yolks, and 360 ml cold liquid milk.
  2. Mix the dough at medium speed until it is half developed. You can also knead it by hand.
  3. Once the dough is half developed, add 90 gr margarine and 1 tsp salt, then keep mixing for about 15 minutes until the dough is smooth and elastic and no longer sticks to the bowl.
  4. Turn off the mixer, take a small piece of dough and stretch it thin. If it does not tear easily and looks translucent, the dough is fully developed.
  5. Round the dough into a ball.
  6. Divide the dough into equal portions, each weighing about 50 gr.
  7. Take one portion, roll it into a smooth ball, then line the balls up in the order they were shaped.
  8. Dust a doughnut cutter with flour, coat the dough in flour, then flatten the dough starting with the ball that was shaped first. If you have no cutter, roll it out with a rolling pin or press it flat by hand.
  9. Place the flattened dough on a non-stick mat or on a surface dusted with flour.
  10. Cover the dough with a clean cloth, then let it rise until doubled in size, about 30 to 60 minutes depending on the room temperature.
  11. Do the touch test. If the dough springs back after being pressed and feels light when lifted, it is ready to fry.
  12. While the dough is proofing, heat the oil over low heat.
  13. Lower a few pieces of dough into the hot oil and fry over low heat until both sides are golden brown. Turn them only once so they do not absorb too much oil.
  14. Once both sides are golden brown, lift out and drain the bomboloni, then continue frying the rest of the dough.
  15. Once everything is fried, let the bomboloni cool completely.
  16. Heat a little water in a pot, then melt 300 gr dark cooking chocolate and 300 gr milk chocolate over it. Using only dark chocolate is fine too.
  17. Once the bomboloni are cool, poke a small hole in the middle and pipe in chocolate spread to taste.
  18. Stir the chopped roasted peanuts into the melted chocolate just until evenly combined.
  19. Dip the bomboloni into the melted chocolate.
  20. Chill in the fridge for about 5 minutes or until the chocolate sets, then serve.
