Ingredients

Chocolate custard:

Pandan custard:

Steps

  1. Put 50 g granulated sugar, 30 g cornstarch, and 20 g cocoa powder into a saucepan, then stir until evenly combined.
  2. Add 300 ml liquid milk, stir until even, then add 40 g dark cooking chocolate.
  3. Cook over medium heat, stirring constantly, until it boils, thickens, and bubbles up, then turn off the heat.
  4. Add 30 g margarine, then stir until it melts and is evenly combined.
  5. Transfer the chocolate custard to a container, press plastic wrap onto the surface so it does not form a skin, then set aside.
  6. Mix 3 egg yolks with 20 g cornstarch, stir until evenly combined, then set aside.
  7. Put 75 g granulated sugar, 300 ml liquid milk, 1 tsp vanilla, and 1/2 tsp pandan paste into a saucepan, then stir until evenly combined.
  8. Cook over medium heat, stirring now and then, until the sugar dissolves; it does not need to boil.
  9. Take a little of the hot mixture, pour it into the yolk and cornstarch mixture, stir until even, then pour it all back into the pan.
  10. Carry on cooking over medium heat, stirring constantly, until it boils, thickens, and bubbles up, then turn off the heat.
  11. Transfer the pandan custard to another container, press plastic wrap onto the surface, then set aside.
  12. Put 360 g high-protein wheat flour, 20 g milk powder, 50 g granulated sugar, and 1 tsp instant yeast into a bowl, then stir until evenly combined.
  13. Add 1 egg yolk, 180 ml water, and 1 tsp pandan paste, then mix for about 2 minutes at maximum speed until evenly combined.
  14. Add 1/2 tsp salt and 45 g margarine, then keep mixing for about 7 to 10 minutes until the dough is smooth and elastic.
  15. Check by stretching a piece of dough, and if it is translucent and does not tear easily it is ready, then round the dough.
  16. Divide the dough into 13 equal pieces of about 50 g each, then round them until smooth.
  17. Line the dough balls up in order on paper dusted with flour so they do not stick.
  18. Cover with a clean cloth and rest for about 30 minutes until doubled in size.
  19. Heat oil over medium-low heat, then add the dough balls a few at a time.
  20. Fry over low heat until lightly browned, turning them only once so they do not soak up much oil.
  21. Once both sides are browned, lift the bomboloni out and drain, then fry the rest of the dough.
  22. Transfer the pandan custard and the chocolate custard into piping bags.
  23. Make a hole in each bomboloni with a chopstick or the tip of a spoon, roll them in powdered sugar, then pipe in as much custard as you like.
