Ingredients

Topping:

Steps

  1. Put the dark cooking chocolate cut into small pieces and the margarine into a heatproof bowl.
  2. Bring water to a boil in a pot over medium heat, set the bowl over the pot, then melt until the chocolate and margarine are liquid and stir until evenly combined.
  3. Lift the bowl off the pot, then set it aside.
  4. Put the eggs, sugar, vanilla powder, and emulsifier into another bowl.
  5. Beat on maximum speed for about 10 minutes until the batter is risen, thick, and holds a ribbon.
  6. Add the rice flour, baking powder, glutinous rice flour, milk powder, and cocoa powder, sifting them in so there are no lumps.
  7. Stir briefly first so the flour does not fly about, then beat for about 30 seconds on the lowest speed.
  8. Carry on folding with a spatula to make sure the flour and batter are evenly combined.
  9. Add the melted chocolate and margarine, then fold from the bottom up until no liquid is left settling in the batter.
  10. Transfer the batter into a piping bag so it is easier to fill the moulds.
  11. Grease the doughnut shaped moulds with a thin layer of margarine.
  12. Pipe the batter into the moulds, without overfilling them.
  13. Tap the moulds several times so the trapped air can escape.
  14. Steam in a steamer with already boiling water for about 20 minutes over medium low heat, with the steamer lid wrapped in a clean cloth.
  15. Test with a skewer to make sure they are done, then take them out and unmould them carefully as they are still hot.
  16. Once the brownie doughnuts are cool, dip them in the glaze then shake them gently so the glaze spreads evenly.
  17. Decorate the tops with more glaze, or scatter over cheese, roasted nuts, or flaked almonds as you like.
