Ingredients

Topping:

Steps

  1. Turn the heat to medium, then heat water in a saucepan until it boils.
  2. Set a bowl holding 55 grams of dark cooking chocolate that has been chopped small and 90 ml of cooking oil over the saucepan, then melt it over the steam until the chocolate has melted and is evenly combined.
  3. Lift the chocolate bowl off the saucepan, let it cool to warm, then set it aside.
  4. Put 3 eggs, 90 grams of granulated sugar, 1/2 teaspoon of emulsifier, and 1/2 teaspoon of vanilla into a bowl.
  5. Beat on maximum speed until the batter is risen, thick, and holds a ribbon trail.
  6. After about 7 minutes of beating, once the mixer trail no longer sinks back easily, turn the mixer off.
  7. Add 70 grams of medium-protein wheat flour and 30 grams of cocoa powder, then sift them to make sure there are no lumps.
  8. Add 1/2 teaspoon of baking powder, which may be sifted together with the flour.
  9. Stir briefly with a spatula before switching the mixer back on so that the flour does not fly about.
  10. Turn the mixer on at the lowest speed and mix for about 20 seconds, just until combined.
  11. Continue folding the batter with a spatula to make sure it is evenly combined.
  12. Add the melted chocolate mixture while it is warm, then fold from the bottom upwards until evenly combined.
  13. Brush the pan thinly with margarine and line it with baking paper; if you have no baking paper, brushing the pan with margarine alone is enough.
  14. Pour the batter into a pan measuring 23 cm long, 10 cm wide, and 10 cm high.
  15. Level the batter with a spoon or spatula, then tap the pan a few times so that air trapped in the batter can escape.
  16. Steam the batter for 30 minutes over medium heat in a steamer whose water is already boiling; line a flat steamer lid with a clean cloth so that condensation does not drip onto the batter.
  17. After about 30 minutes of steaming, test the brownies with a skewer; if no batter clings to the skewer the brownies are done, then lift out and remove the pan from the steamer.
  18. While still hot, turn the brownies out of the pan and peel off the baking paper.
  19. Melt 75 grams of dark cooking chocolate for the topping.
  20. Melt 30 grams of white chocolate for making the pattern.
  21. Once the brownies have cooled, spread the melted chocolate topping over them and make a pattern with the white chocolate to taste.
  22. Slice the brownies and they are ready to serve.
