Ingredients

TOPPING : (to taste):

Steps

  1. Put 1 tsp instant yeast and 1 tsp granulated sugar into a glass.
  2. Pour in 100 ml warm water, stir until combined, then cover and leave for 5 to 10 minutes until the yeast foams and rises.
  3. Prepare a bowl, add 250 g high-protein wheat flour, 2 heaped tbsp milk powder and 3 tbsp powdered sugar, then stir until evenly combined.
  4. Add 2 egg yolks and the activated yeast mixture, then stir until evenly combined.
  5. Knead the dough by hand for about one minute until it is half smooth.
  6. Add 1 tsp SP emulsifier and 1 tbsp margarine, then knead until they are evenly worked into the dough.
  7. Shape the dough into a ball, return it to the bowl, cover with a clean cloth, then rest for 40 to 60 minutes until doubled in size.
  8. Uncover the dough, then punch it down to release the trapped air.
  9. Move the dough onto a surface dusted with a little flour, then divide it into pieces of about 40 g each.
  10. Roll each piece into a smooth ball, then line them up in the order they were rolled.
  11. Make a hole in the centre with a finger dipped in flour, or flatten the dough and cut it with a doughnut cutter or a piping tip.
  12. Cover the shaped doughnuts with a clean cloth and rest for 30 minutes until risen and light when lifted.
  13. Heat oil in a pan, then fry the doughnuts over low heat starting with the ones shaped first.
  14. Do not flip the doughnuts back and forth; just peek underneath and turn once when they are golden brown.
  15. Lift out the cooked doughnuts and drain them without stacking so they do not dent, and fry the rest the same way.
  16. Let the doughnuts cool and the oil drain off, then dip the tops into the glaze and shake gently so it spreads evenly.
  17. Decorate the doughnuts to taste with white chocolate glaze piped from a paper cone, chocochips or sliced almonds.
