Ingredients

TOPPING : (to taste):

Steps

  1. Put 1 tsp instant yeast, 1 tsp granulated sugar and 100 ml warm water into a glass, then stir until combined.
  2. Cover the glass and leave it for about 3 to 5 minutes until the yeast rises and foams; if it does not foam the yeast is dead and cannot be used.
  3. Put 250 g all-purpose flour, 3 tbsp icing sugar and 2 tbsp milk powder into a bowl, then stir until evenly combined.
  4. Add 2 egg yolks and the yeast mixture, then stir until evenly combined.
  5. Knead the dough by hand until half smooth; if it feels too dry you may add 2 to 3 tbsp of water.
  6. Add a pinch of salt, 1/2 tsp SP emulsifier and 1 heaped tablespoon of margarine, about 15 g, then knead until the margarine is fully absorbed.
  7. Shape the dough into a ball, return it to the bowl, cover with plastic wrap or a clean cloth, then leave 40 to 60 minutes until doubled in size.
  8. Punch the dough down, then divide it into portions of about 30 g each, which gives around 15 pieces.
  9. Roll each portion into a smooth ball and place them on baking paper in order; cover the waiting dough with a clean cloth so it stays moist.
  10. Flatten each ball, then make a hole in the centre with a piping nozzle or a finger dipped in flour.
  11. Cover the dough with a clean cloth and leave it for about 30 minutes until risen.
  12. Heat oil in a pan over medium-low heat, then add as many doughnuts as fit comfortably since they will expand.
  13. Fry the doughnuts until golden brown and turn them only once so they do not absorb too much oil.
  14. Once they are browned and the white ring shows, lift the doughnuts out and drain them, then let them cool laid out in a row without stacking so they do not get dented.
  15. Once the doughnuts are cool, stir the glaze first so any settled oil is mixed back in, then dip the doughnuts into chocolate, white chocolate or matcha glaze.
  16. Even out the glaze by shaking gently, then dip into sprinkles or decorate with another glaze to taste.
