Ingredients

Steps

  1. In a bowl put 400 g high protein wheat flour, 100 g medium protein wheat flour, 75 g icing sugar, 1/2 tsp vanilla powder, 2 tsp instant yeast, 10 g milk powder, 1 egg, 2 egg yolks, and 225 ml cold liquid milk.
  2. Mix the dough at medium speed for about 15 minutes until smooth and elastic, you can also knead it by hand.
  3. Once the dough is half developed, add 75 g margarine and 1 tsp salt, then keep mixing until the dough is smooth and elastic.
  4. Take a little dough and stretch it out to check that it is smooth and elastic and does not tear easily.
  5. Round the dough.
  6. Divide the dough into equal portions of about 50 g each.
  7. Take one piece and round it until it is smooth and even.
  8. Line up the rounded pieces in the order they were shaped.
  9. Once all the dough is shaped, cover it with a clean cloth and rest it for about 30 minutes.
  10. After about 30 minutes, dust the doughnut cutter with a little flour, coat the dough in flour, then put it in the cutter, flatten it, and make the hole.
  11. Place the cut doughnuts on a non stick mat or a surface dusted with wheat flour.
  12. Cover the dough with a clean cloth, then let it rest until doubled in size, about 30 to 60 minutes.
  13. Touch test the dough, if it springs back to its original shape and feels light it is ready to fry.
  14. Heat the oil over the lowest heat so the doughnuts do not scorch, then add a batch of dough to the oil.
  15. Fry until golden brown, turning the doughnuts only once so they do not soak up too much oil.
  16. Once both sides are browned, lift out and drain the doughnuts, then continue frying the rest.
  17. Once the doughnuts are cool, make the topping from 25 g milk powder mixed with 50 g icing sugar.
  18. For the matcha topping, mix 10 g matcha powder with 30 g icing sugar.
  19. For the Milo topping, mix 25 g Milo powder with 50 g icing sugar.
  20. Coat the doughnuts in the topping only when you are about to eat them because the coating melts easily.
